In the Vineyard

Vines are spur pruned by hand and careful vineyard management sees irrigation applied only when necessary to keep the crop at optimum levels. Yields are deliberately restricted with all grapes handpicked over a period of weeks to deliver premium quality fruit.

Grapes are gently crushed followed by open fermentation and hand operated basket-pressing is used to extract colour and flavour from the skins. The wine is aged in seasoned oak barrels for a minimum of 12 months. Bottle age, prior to release ensures Spook Hill wines are soft and approachable whilst delivering a firm, full bodied style.
