Spook Hill Wines was conceived in 1999 when a group of red wine enthusiasts progressed from grapegrowing through to wine production. With successive vintages, the winemaking has remained a small scale affair with a hands on approach throughout. Using traditional methods, the grapes are hand picked then gently crushed followed by open fermentation. Hand operated basket-pressing is used to extract colour and flavour from the skins. The wine is aged in American Oak barrels for a minimum of 18 months. This traditional, hands-on process from vines to wine uses minimum intervention with an aim to produce wines of full fruit flavour and soft oak character.
